Sauté vegetables

For the best texture, keep the soup at a steady simmer while the noodles cook, so they turn tender without getting mushy. Store leftovers in an airtight container in the refrigerator for up to 3 days; the noodles may absorb more broth—add a splash of chicken broth when reheating. Freezing is not recommended because egg noodles can soften too much after thawing. For a lighter option, use olive oil instead of butter (or reduce butter to 1/2 tablespoon) to cut saturated fat.
