Ingredients
  

Chicken thighs and aromatics
  • 1.5 lb chicken thighs bone-in for richest broth
  • 4 carrots sliced
  • 4 celery sliced
  • 1 onion diced
  • 8 garlic minced
  • 2 tbsp fresh ginger grated
  • 8 cup chicken broth
  • 1 tsp turmeric
  • 1 tsp dried thyme
  • 0.5 tsp dried oregano
Finish and noodles
  • 1 tbsp lemon juice
  • 1 tbsp honey
  • 8 oz egg noodles
  • 1 fresh parsley for serving
  • 1 lemon extra, for serving
  • 1 salt and pepper to taste

Method
 

Build the broth
  1. Add chicken thighs, carrots, celery, onion, garlic, ginger, chicken broth, turmeric, thyme, and oregano to a large pot. Bring the mixture to a boil.
  2. Reduce to a simmer and cook 25-30 minutes, until the chicken is very tender. Skim any foam if needed and keep the broth at a steady simmer.
Shred and cook noodles
  1. Remove the chicken from the pot, then shred the meat and discard bones and skin. Return the shredded chicken to the pot.
  2. Add egg noodles to the pot and cook 6-8 minutes until tender. Stir occasionally to prevent sticking.
Season and serve
  1. Stir in lemon juice and honey, then season with salt and pepper to taste. Simmer 1-2 minutes just to meld the flavors.
  2. Ladle into bowls and serve with extra lemon and fresh parsley. Add more lemon at the table if you like it brighter.

Notes

For the clearest broth, keep the simmer gentle once it starts—boiling hard can make it cloudy. Store leftovers in the refrigerator up to 3 days; freeze soup (without worrying about noodles) up to 2 months, then reheat gently and add a splash of broth if needed. For a lighter option, use skinless chicken thighs (still bone-in if you want the richest flavor) and consider whole-wheat egg noodles.
