  • 1 cup dry white wine Use for deglazing and flavor.
  • 8 oz cream cheese Cubed for easier melting.

Cheese topping and finishing
  • 2 cup Gruyere cheese Shredded; reserve for topping.
  • 1 fresh thyme For garnish.
  • 0.25 salt and pepper To taste; add during seasoning step.

Equipment

  • 1 cast iron skillet

Method

Preheat and caramelize the onions
  1. Preheat oven to 375F.
  2. Melt butter in a large oven-safe skillet over medium heat, then cook onions 30-35 minutes until deeply caramelized with dark golden edges.
Build the flavor base
  1. Add garlic and dried thyme and cook 2 minutes, stirring, until fragrant.
  2. Add dry white wine and cook 2 more minutes to reduce slightly.
  3. Add beef broth, Worcestershire sauce, and uncooked orzo, stirring in diced chicken until evenly combined.
Simmer and finish with cheese
  1. Bring the mixture to a simmer and stir in cream cheese until fully melted and creamy.
  2. Season with salt and pepper to taste, then scatter Gruyere over the top in an even layer.
  3. Bake 25-30 minutes until orzo is cooked, chicken is done, and the cheese is golden and bubbling at the edges, then garnish with fresh thyme before serving.

Notes

For the best texture, caramelize the onions until very dark and jammy—this is where the casserole gets its deep French-onion flavor. Store leftovers in the fridge up to 3 days; reheat in a 325F oven or microwave until hot. Freezing is not recommended because the cream cheese can change texture when thawed. Dietary swap: use gluten-free orzo (uncooked) and keep an eye on bake time by a few minutes as needed.
