Prep and preheat
- Preheat the oven to 350°F and grease a 9x5-inch loaf pan.
- Grease the loaf pan thoroughly so the bread releases cleanly after baking.
Mix the dry ingredients
- Whisk together the all-purpose flour, baking powder, and salt in a large bowl.
Mix the wet ingredients
- Whisk the eggs, milk, and vegetable oil in a separate bowl until combined.
Combine batter
- Pour the wet ingredients into the dry ingredients and stir until just combined.
Fold in fillings
- Fold in the shredded zucchini, shredded sharp cheddar cheese, and chopped fresh chives until evenly distributed.
Bake
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–55 minutes at 350°F, until a toothpick inserted comes out clean.
Cool and slice
- Cool the loaf in the pan for 10 minutes before slicing, so it sets without crumbling.
Notes
For best texture, squeeze the shredded zucchini very well so the loaf stays moist but not gummy. Store wrapped in the refrigerator for up to 4 days; reheat slices in the toaster oven. Freeze for up to 2 months, thaw in the fridge overnight. For a dairy-light swap, use reduced-fat cheddar (or a lactose-free cheddar) while keeping the same baking times.
