Ingredients

pork chops
  • 4 bone-in pork chops (about 1 inch thick)
potatoes
  • 2 lb baby potatoes, halved
green beans
  • 2 cup green beans, trimmed
olive oil
  • 3 tbsp olive oil
garlic
  • 4 clove garlic, minced
butter
  • 2 tbsp butter, melted
rosemary
  • 1 tsp dried rosemary
thyme
  • 1 tsp dried thyme
garlic powder
  • 1 tsp garlic powder
smoked paprika
  • 1 tsp smoked paprika
seasoning
  • 0.5 Salt and pepper to taste
parsley garnish
  • 1 Fresh parsley for garnish

Equipment

  • 1 sheet pan
  • 1 cast iron skillet

Method

Prep and roast potatoes
  1. Preheat oven to 425°F and line a large rimmed baking sheet with parchment for easy cleanup.
  2. Toss halved baby potatoes with 2 tbsp olive oil, dried rosemary, dried thyme, garlic powder, salt, and pepper, then spread them in a single layer on the pan.
  3. Roast the potatoes for 15 minutes, until they begin to turn golden at the edges.
Sear pork and finish on the sheet pan
  1. Season bone-in pork chops with smoked paprika, salt, and pepper, then sear in a hot skillet with the remaining olive oil for 2 minutes per side.
  2. Push the potatoes to the edges of the sheet pan, place the pork chops in the center, and tuck the trimmed green beans around them.
  3. Mix minced garlic with melted butter and drizzle over the pork chops, potatoes, and green beans so everything roasts in garlicky butter.
  4. Roast 18-20 more minutes at 425°F until the pork chops reach 145°F, then garnish with fresh parsley before serving.

Notes

For the juiciest pork chops, use a meat thermometer and pull the chops right at 145°F, then rest briefly while the rest of the pan comes together. Refrigerate leftovers in an airtight container for up to 3 days; reheat in a 350°F oven until warm. Freezing isn’t recommended for best texture. For a lower-fat option, use light butter or replace the butter with an olive-oil garlic drizzle.
