Prep and roast potatoes
- Preheat oven to 425°F and line a large rimmed baking sheet with parchment for easy cleanup.
- Toss halved baby potatoes with 2 tbsp olive oil, dried rosemary, dried thyme, garlic powder, salt, and pepper, then spread them in a single layer on the pan.
- Roast the potatoes for 15 minutes, until they begin to turn golden at the edges.
Sear pork and finish on the sheet pan
- Season bone-in pork chops with smoked paprika, salt, and pepper, then sear in a hot skillet with the remaining olive oil for 2 minutes per side.
- Push the potatoes to the edges of the sheet pan, place the pork chops in the center, and tuck the trimmed green beans around them.
- Mix minced garlic with melted butter and drizzle over the pork chops, potatoes, and green beans so everything roasts in garlicky butter.
- Roast 18-20 more minutes at 425°F until the pork chops reach 145°F, then garnish with fresh parsley before serving.
Notes
For the juiciest pork chops, use a meat thermometer and pull the chops right at 145°F, then rest briefly while the rest of the pan comes together. Refrigerate leftovers in an airtight container for up to 3 days; reheat in a 350°F oven until warm. Freezing isn’t recommended for best texture. For a lower-fat option, use light butter or replace the butter with an olive-oil garlic drizzle.
