Mix and form
- Combine flaked salmon, crushed saltine crackers, egg, diced onion, diced green bell pepper, mayonnaise, and Old Bay seasoning in a large bowl until well mixed.
- Form the mixture into 6–8 patties, pressing firmly so they hold together.
Fry and serve
- Heat vegetable oil in a large skillet over medium heat until shimmering.
- Fry patties for 3–4 minutes per side, until golden brown and crispy.
- Drain patties on paper towels.
- Serve warm with lemon wedges or tartar sauce.
Notes
For the crispest croquettes, keep the patties evenly thick and avoid moving them during the first minute of frying so they set and brown. Refrigerate leftovers in a sealed container up to 3 days and reheat in a skillet over medium heat until warmed through and re-crisped; freezing is not recommended because the texture can soften.
